Mozzarella Stick Bruschetta
Let's face it...we all love a good Wisconsin cheese stick.  And normally, we could just heat these up and
go.  But game day is a special occasion, so we need to take this working class hero and dress it up for
company.  So, we've come up with a
"Brilliant Disguise", turning this USA junkfood staple into a
proper hors d'oeuvre.  We used a package of TGI Friday’s mozzarella sticks, by the way. And this
recipe is easily doubled, tripled, whatever.

Lineup:
1 (11 oz.) package frozen mozzarella sticks
7 slices French bread
2 tomatoes, diced
1 clove garlic, minced
2 tablespoons chopped basil
1 tablespoon olive oil
½ tablespoon balsamic vinegar
½ teaspoon kosher salt

Playbook:
Preheat the oven to 450.

Bake mozzarella sticks according to package directions.  Toast the bread slices.

In a small bowl combine the tomatoes, garlic, basil, olive oil, balsamic vinegar and salt.  Mix well.

Arrange the bread slices on a plate. Top each slice with a mozzarella stick. Spoon some tomato mixture
over cheese.
